Melt-in-your-mouth Lemon Cookies

Bring a burst of sunshine into your day with this delicious cookie that has just the right amount of lemon zip!

Melt-in-your-mouth Lemon Cookies

Cookies:
3/4 cup butter (no substitutes), softened
1/3 cup confectioners' sugar
1 tsp lemon juice
1 1/4 cups all-purpose flour
1/2 cup cornstarch

Frosting:
1/4 cup butter, softened
3/4 cup confectioners' sugar
1 tsp lemon juice
1 tsp grated lemon peel
1-3 drops yellow food coloring

For cookies: In a mixing bowl, cream butter and sugar until light and fluffy, then beat in lemon juice. In a smaller bowl, combine the flour and cornstarch, then gradually add it to the creamed mixture. Shape into two 8-in logs, wrap in plastic wrap, and refrigerate them for 2 hours or until firm. Unwrap and cut logs into 1/4-in slices, before placing 2 inches apart on an ungreased baking sheet. Bake at 350* for 8-12 minutes or until firm to the touch, then remove to wire rack to cool.

For frosting: In a small mixing bowl, combine all ingredients and beat until smooth. Frost cookies after they are completely cooled.
